Minestrone Soup w/Garden Tomatoes, Mini Egg-What The Heck???


Minestrone Soup w/Garden Tomatoes-
I had lots of tomatoes from the garden from our last harvest. I needed to use them up so I made some minestrone this afternoon. There's lots of recipes online so I just made a basic one, lots of veggies, add the pasta last. Cheese on top with some bread, oh yeah! We're expecting some snow tomorrow morning, so it will make for a fast dinner tomorrow night. It simmered in the large crock pot all day, great dinner and made the whole house smell good! I froze half for later in the month.I sill have more left so it will be salsa time in a few days. Winter's on the way, lots of laves falling! Soup time...

Mini Egg-What The Heck???
I found one rather large egg and then one really tiny the same day. How odd
is this???

Even though our weather remains unusually warm for this time of year, it IS soup time in our house. I've been making batches of different soups (NO tomatoes from the garden to use up though :o[) to stash in the freezer. We're looking forward to the start of snow, but they're forecasting a warmer winter with less precipitation for us. Oh well, it will be easy on the wood pile!

I hear you, weird weather. It snowed a bit last night, went from 62 to 32 in less than 8 hours...

Love that picture of Posey and the squirrel! At least you are getting eggs - odd as they are, LOL! Our weather has been like a yoyo. It was so warm yesterday afternoon that I opened the sliding door and left the screen door in. Now, tonight, they are predicting in the low 20s! Oy!

That soup looks fantastic! I think that's what I need on the lunch menu today.

Love the shots with Posey. Such a nice leaf guard.

Interesting about the eggs, but you don't have pullets at present, do you?. When some of my first chickens got older, they would on occasion present me with a mini-egg. No idea why!
