First Dark Days Challenge Meal



First Dark Days Challenge Meal-
Well, this one was pretty easy. I did the same dinner as the one this summer Easy French Style Baked Eggs with my own eggs, home grown (last batch sadly) collard greens, local butter, and bread from a local French bakery (oh la la!). Very tasty and healthy, except for the cream and butter maybe. Also great on a cold winter's night :)  Nothing like melted cheese to spruce up ANYTHING!

    Although, that baked egg dish looks awesome!

  2. I am going to have to try the baked eggs. They look so good. Plus our chicken are making us come up with ways to use eggs. I thought they slowed down in the winter.

  3. Oh, I am going to have to try those eggs, too! Yum! My Dark Days Challenge meal was Sunday - Vegetarian Lasagna in the crockpot - my kale, mushrooms from the Mushroom Guy at the farmers market (dehydrated by me), ricotta & mozz I made from my Jasmine's milk, one duck egg (neighbor's duck), rehydrated sliced zucchini (mine), dried herbs (mine), and rice lasagna noodles (organic/bought). Good but I think I would substitute spinach for the kale - it was a little overpowering. This is a fun challenge (plus I get new ideas to spruce up winter meals!)

  4. Did you use fresh or dried herbs? One of the reviews on the Food Network site said it isn't very good with dried herbs but I don't have any fresh!!
    I'm lovin' the Dark Days Challenge and getting new ideas from everyone! :)

  5. Keep it coming! I used my own dried herbs and they were fine. Just a little "brighter" with fresh...
