My Dark Days Challenge meal was Sunday - Vegetarian Lasagna in the crockpot - my kale, mushrooms from the Mushroom Guy at the farmers market (dehydrated by me), ricotta & mozz I made from my Jasmine's milk, one duck egg (neighbor's duck), rehydrated sliced zucchini (mine), dried herbs (mine), and rice lasagna noodles (organic/bought). Good but I think I would substitute spinach for the kale - it was a little overpowering.
